Mejia’s Bakery has been a Pampa staple for nearly 20 years and through those years, the Mejia family has expanded their business to include ice cream and frozen treats to now adding a pizza establishment right next door.
Jay Mejia, his father and brother had been tinkering with the idea of having an all-you-can-eat pizza buffet restaurant for a couple of years, and over the last several months, Jay has perfected his pizza recipes and is eager to share them with the folks of Pampa.
Many people have said, myself included, that there hasn’t been a pizza buffet since the old Pizza Hut that sat on the corner of Kingsmill and Hobart had one and after the buzz of a pizza buffet potentially opening up in town, folks realize how long it’s been and are excited to welcome it.
Just as the entire menu from Mejia’s Bakery and their ice cream is homemade, so too will the pizzas and other items that Jay has planned.
From making the dough and sauces completely from scratch down to hand-cutting the potatoes for their in-house fries, Jay gaurantees freshness and authenticity with no cut corners.
“I’m going to be making my own crusts with my own spices,” Jay said. “We’re going to also have wings and French fries that we ourselves are going to cut and season. There’s going to be two dessert pizzas and of course a salad bar. I also want people to share ideas they have about what they may want to try.”
Big Boys Pizza will be offering a $10 eight-pizza buffet as well as a full menu where customers can order and pick up, and Jay is planning on having everything ready to go and be able to open the doors within a month or into early spring.
Jay says that he is not trying to be in competition with anyone and only wants to share his love of good food with the community.
“This is just another chance for me to serve Pampa and I’m grateful to be able to give the community something a little different and more economical.”
